Abundance Salad


5 medium boiled potatoes
2 pods of red bell pepper
4 tomatoes
10 small onions
150 g of green olives or black olives
4 hard boiled eggs
350 g boiled bean pods
350 g of tuna in oil (drain the oil)
6 pickled cucumbers, coarsely chopped
6 tbsp. l olive oil
1 tsp mustard
2-3 tbsp vinegar
120 g anchovy fillets
4 walnuts, peeled and coarsely broken (optional)
Salt, black pepper, greens

Peel the potatoes, cut into circles and put in a salad bowl, peel the pepper from the stem and seeds, cut into pieces. Chop the tomatoes. Peel the onion, leaving the core about 2 cm in diameter, cut into rings. Remove seeds from olives. Cut the eggs into slices, and the bean pods into pieces 2-3 cm long.

Crush tuna on potatoes, put tomatoes, beans, sweet peppers, cucumbers, onions and olives on top. Stir and garnish with an egg. Prepare a dressing in a cup: beat olive oil, mustard and vinegar, add salt, pepper and herbs. Pour salad dressing and garnish with anchovies and walnuts.
