Cranberry Sauce
A classic turkey sauce for Christmas.
2 oranges
225 g sugar
2 tbsp lemon juice
2.5 cm piece of ginger, peeled and cut into thin strips,
350 g of fresh or frozen cranberries,
1/2 tbsp white pepper.
Thinly cut the zest from the orange and cut into thin strips. Squeeze the juice from both oranges. Combine sugar and lemon juice in a small saucepan. Slowly bring to a boil, cook for about 6 minutes, until the syrup begins to thicken. Remove from heat immediately and add remaining ingredients. Again put on medium heat, cook for about 5 minutes, stirring or until the cranberries begin to burst, but do not fall apart at all (from frozen cranberries - about 7 minutes). Serve cold.
