Kuksu - Korean Noodles

2 kg of buckwheat flour
400 g of starch
400 g of beef
400 g chicken
400 g of pork
700 g kimchi
1 egg
100 g pears
50 g green onions,
3 cloves of garlic,

a few drops of concentrated meat broth,
2 tbsp. tablespoons of salt
1 tbsp. a spoonful of soy sauce
a few drops of vegetable oil,
1 teaspoon of salted sesame,
black pepper on the tip of the knife,
2 teaspoons red pepper,
1 tbsp. a spoon of baking soda
1 teaspoon of mustard
2 tbsp. tablespoons of vinegar
some red bell peppers for decoration.

Quickly mix flour and starch, add water heated to 70-80 ° C, and cook dough for kuksu. Add baking soda. Fill the dough into the press and squeeze the noodles. Cook the beef, pork, chicken, then cut the beef and pork into thin pieces, and cut the chicken into small pieces. Season the resulting broth with vegetable oil, soy sauce, salt, various seasonings. Peel the pears, cut into slices. Boil the egg and chop finely.

Kuksu put in a plate slide, first put the egg and kimchi, then meat, pears, sauce, chopped green onions, red pepper. Pour the broth into plates, serve mustard and vinegar separately.
