Portuguese Fish and Rice



750 g of fish
4-5 tbsp vegetable oil
2 onions
2 cloves of garlic
1 bunch parsley
500 g tomatoes
1 cup rice
¼ glasses of white wine
1 tsp salt
Pepper to taste
Marjoram, thyme

Pour rice with plenty of salted water. Finely chop the onion and lightly fry in vegetable oil. Add crushed garlic, parsley, chopped tomatoes or tomato paste diluted in water and stew. Strain the rice almost ready and dry well. Add tomatoes and wine. Season with salt, pepper and herbs. Dice raw fish, put on prepared rice and simmer under the lid for 20 minutes until cooked.
