Sushi vinegar



4 cups rice vinegar
6 tbsp. tablespoons of sugar
2 tbsp. tablespoons of salt
2 tbsp. tablespoons sake
1 piece combo (1.5x7.5 cm)

Stir in the pan vinegar, sugar and salt. Put on a small fire and cook until sugar and salt dissolve, stirring constantly. Cool to room temperature, add kombu and sake. Pour into a jar and store in a cool, dark place.
