Cheese Oat Soup


This soup is Sophia Loren's own invention. It is prepared very quickly and simply from a minimal set of products.

4 tbsp oatmeal
1 ½ liter chicken stock
2 egg yolks
180 g grated Parmesan
2 tbsp chopped parsley
Salt
Olive oil (optional)

Pour oatmeal into a pot with broth and leave to swell for 20-30 minutes. Slowly bring to a boil over moderate heat until the oatmeal is soft (about 30 minutes).

Separately, beat the yolks in a bowl, gradually leading to a boiling broth, then slowly pour into the soup standing on the fire. Continue stirring for another minute to warm the soup. But it did not boil, otherwise the egg will curl. To salt.

Pour the soup into the tureen, add the parmesan and parsley. Sitting at the table can add, if desired, even cheese or a little olive oil.
