Chocolate cake


1 kg of flour
15-20 g yeast
100 g of warm water
16 eggs
2 cups granulated sugar
2.5 cups grated almonds
50-100 g grated chocolate
0.5 cups of rum
100 g of red wine
0.2 cups dried rye crackers
0.2 cup finely chopped candied fruit, 1 tsp. cinnamon
0.5 tsp crushed cloves
1 lemon juice

Prepare a dough of 1, 25 cups flour, yeast and warm water. Allow to rise, knead with a spatula until smooth, add 16 yolks, crushed white with 2 cups of granulated sugar, add almonds, chocolate, rum, red wine, rye crackers, candied fruit, cinnamon, cloves and lemon juice. Add the remaining flour, knead the dough thoroughly with a spatula, let it rise, combine with 12 whipped proteins, stirring from top to bottom. If the dough is too thin, add a little flour, sifting it through a strainer.

Pour the dough into a greased with butter and sprinkled with breadcrumbs form and immediately put in a moderately heated oven for 1-1.5 hours. Decorate the finished, cooled cake with chocolate icing.
