Aioli sauce

Aioli sauce



4 cloves of garlic
1/2 tsp salt
1 egg yolk
1/2 liter olive oil
fresh lemon juice

The sauce can be made in a mortar with a pestle or food processor.

Crush the garlic with salt. Add the yolk and pour the oil dropwise, whisking constantly. When the mixture thickens like mayonnaise, add lemon juice to taste. The taste can be made stronger by adding 3 drops of Tabasco sauce.
