Ratatouille

Ratatouille



2 red peppers
1 onion
5 zucchini squash
1 clove of garlic
5 tomatoes
2 tbsp. l tomato paste
4 tbsp. l olive oil
1 tbsp fresh thyme

Heat olive oil and fry chopped onion and peeled and chopped red peppers for 5 minutes. Add chopped zucchini zucchini, 1/2 tbsp fresh thyme and crushed clove of garlic, fry for another 5 minutes. Add peeled tomatoes, tomato paste and another 1/2 tbsp of fresh thyme. Simmer for 10 minutes until almost no liquid remains. Season and serve.
