Salad "Nicoise"




250 g halved potatoes
300 g green bean pods
2 eggs
15 olives
1/2 onion, chopped
200 g cherry tomatoes, cut in half
Parsley

Refueling:
4 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp balsamic vinegar
1 clove of garlic

Put the potatoes in a pot with cold water, bring to a boil and cook for 12 minutes. Add the chopped beans from the ends 3 minutes before the potatoes are ready. In another pan, boil hard-boiled eggs for 7 minutes. Dip in cold water until they are completely cool. Peel and cut in half.

To make a dressing, mix olive oil, mustard, vinegar and 1 clove of garlic, passed through a garlic press. Mix potato beans with olives, onions, tomatoes, eggs and dressing. Garnish with parsley before serving.
